I love delicious and thick sandwiches and when I have the time, I like to make them. This sandwich is a delicious and versatile meal. Fill the sandwiches with your favorite (plant-based) proteins, vegetables and spreads for a hearty option on the go.
I have now filled it with fresh cream cheese, sun-dried tomatoes, avocado slices, goat cheese and arugula. It is a satisfying and healthy meal in just 5 minutes.
Fill them with whatever you like, for example you can replace the fresh cream cheese with fresh herb cheese. You can mash the avocado if you want. Instead of sun-dried tomatoes you can use fresh tomatoes. And you can replace the goat cheese with old cheese, brie or a type of ham such as Prosciutto. You can replace the rocket with baby spinach, watercress or another type of lettuce.
You can also add some hummus to it.
Adding pickles, herbs or roasted peppers will enhance the flavor of this recipe even more.
Bread
I used whole wheat rolls and baked them briefly in the oven. It is best to use crusty bread, because the filling is already creamy and soft. You can of course also use whole wheat toast instead. And a crusty baguette or ciabatta will also do well.

Recipe Goat cheese sandwich with avocado:
Ingrediënten
- 2 volkorenbroodjes
- 1 avocado
- 2 el verse roomkaas
- 4 zongedroogde tomaten
- 2 plakken geitenkaas
- 1 handje rucola
- peper en zout
Instructies
- Bak de broodjes af in de oven. Snijd ze dan doormidden en besmeer een helft met een beetje olie van de zongedroogde tomaten.
- Snijd je avocado in dunne plakjes. Je kunt de avocadoplakjes al gebruiken, of je kunt ze prakken om een romigere textuur te krijgen.
- Besmeer een helft van de broodjes met de verse roomkaas. Leg daar zongedroogde tomaatjes, avocadoplakjes en plakje geitenkaas op.
- Bestrooi met wat versgemalen peper en eventueel wat zout. Top het af met rucola sla.
